That's for sure, Sally! We practically become vegetarians in the summer with the abundant fresh veggies! Small world on the Knoxville connection, LOL. We live outside the city limits, in the pretty northwest area of the county. Rolling hills and pastures!
That looks absolutely delicious. Maybe I'll make one like it for my lunch, but the only home-grown bit would be the basil, my tomatoes and onions aren't ready yet.
